How to convert into plain text?

In general, you don't. Potentially, it's like converting hamburger back
to cow!
postscript is interested in putting marks on a page, not in
maintaining the structure of a document. A perfectly valid Postscript
program for printing a page could individually locate every letter, in
any random order. This is, of course, unlikely, but I mention it to show
that there is no guaranteed sure-fire means of converting Postscript to
text. However, there are some utilities around that try and do this,
with some success. There is a utility which comes with Ghostscript
called ps2ascii which may do the job for you. The approach I've used has
been to print the document and then run it through a scanner with OCR
software!
